STUDY ON RHEOLOGICAL PROPERTIES OF MOLTEN CHOCOLATE

  • 摘要: 使用NXS-11型旋转粘度计测量融化巧克力浆料流变特性,发现它具有假塑性和触变性.

     

    Abstract: This paper studies on rheological properties of molten chocolate using a rheometer. The molten chocolate shows pseudoplastic behaviour and exhibits thixotropy.
